Looking for a new apple crumble recipe? Here's an easy idea with a tropical twist. Tangy kiwi fruit provides the perfect balance to sweet spiced apple, and we've added oats, coconut and hazelnuts to the crumble topping for a lovely crunch. A winning winter pud! See method
Ingredients
- 60g butter, cold and cubed
- 75g plain flour
- 50g rolled oats
- 30g desiccated coconut
- 100g light brown soft sugar
- 30g blanched hazelnuts or almonds, chopped
- 300g cooking apples, peeled, cored and chopped
- ½ lemon, juiced
- 4 cardamom pods, seeds removed and crushed, pods discarded
- 6 ripe kiwis, washed, ends trimmed, each cut into 1cm rounds
- 180g Greek yogurt (optional)

Method
- Rub the butter and flour together with your fingertips until the mixture resembles breadcrumbs. Add the oats, desiccated coconut, 50g sugar and the nuts, rubbing a little more until clusters form.
- Preheat the oven to gas 4, 180°C, fan 160°C. Put the apples, remaining sugar and the lemon juice in a saucepan and cook gently over a medium heat for 10 mins, stirring occasionally, until the apples start to soften and break down.
- Tip the apple mixture into a deep baking dish and stir through the cardamom seeds and kiwis. Top with the oaty crumble, then bake for 25-30 mins until bubbly and golden. Serve with a spoonful of yogurt, if you like.
