Ingredients
- 25g caster sugar
- 3 lemons, zested and juiced
- 1 fresh rosemary sprig, plus extra to serve
- 2ltrs soda water
- ice

Method
- Add the sugar and the juice of 2 lemons to a small saucepan. Bring to a simmer, then reduce the heat to low and bubble gently for 6-8 mins until syrupy. Remove from the heat, add the rosemary sprig and leave to infuse and cool completely.
- Add the remaining lemon juice to a large jug and stir in the syrup. Top up with soda water and ice, stirring well. Garnish with extra rosemary sprigs and the lemon zest to serve.
