Simmered slowly with lemon, this homemade barley water is the perfect way to quench your thirst this summer and a great alternative to sugary soft drinks. See method
Ingredients
- 75g pearl barley
- 1 large lemon, zest pared and juiced, plus extra slices to serve
- 1 large orange, zest pared and juiced
- 3 tbsp honey
If you don't have any pears, try using apples

Method
- Soak the barley in cold water for 15 mins. Drain, then simmer in 1.5ltr water for 20 mins. Remove from the heat and add the pared citrus zests. Steep for 20 mins.
- Strain to remove the zest and barley. Cool. Stir the citrus juices and honey into the barley water. Serve cold in glasses over ice and garnish with the extra lemon slices.
