Ingredients
- 75g (3oz) ginger, peeled and finely sliced
- 4-5 limes, 2 zested, rest squeezed to give 200ml juice, plus extra slices to serve (optional)
- 200g (7oz) caster sugar
- small bunch mint, to serve
- ice cubes
- 2ltr bottle sparkling water, chilled, to serve
If you don't have any limes, try a lemon instead

Method
A refreshing summer mocktail, this ginger lime spritz is alcohol-free and absolutely delicious. the gentle hum of ginger brings welcome balance to the sourness of lime juice, while mint gives freshness and the fizz dances on your tongue. Try it during the next summer heatwave!
- Put the ginger, lime zest and caster sugar in a pan with 600ml (1pt) water. Bring to the boil, then reduce the heat and simmer for 20 minutes, until syrupy. Stir in the lime juice, then strain the liquid through a sieve into a sterilized bottle and leave to cool. Chill until needed.
- To serve, pour a little cordial into a glass, then add a handful of ice cubes, a sprig of mint< and top up with sparkling water.
