- 1 pink grapefruit, peeled
- 500g pot quark
- 120g Greek-style yogurt
- 2 tbsp maple syrup
- 120g super berry granola

Method
- Segment the grapefruit, making sure to catch the juice. Mix the quark, yogurt, 2 tbsp of the grapefruit juice and half the maple syrup in a bowl.
- Divide the granola between 4 glasses and spoon over the quark mix. Top with the grapefruit and drizzle over the remaining maple syrup to serve.
Get ahead: Make up to the end of step 1 and chill overnight. Top with the grapefruit segments and maple syrup to serve.
