For a fruity festive cocktail idea, try this plum and prosecco fizz recipe. Simmer plums and vanilla into a sweet syrup, then top up with prosecco for a pretty Christmas drink. See method
Ingredients
- 6 plums, stones removed and roughly chopped
- 125g caster sugar
- 1 tsp vanilla extract
- 750ml prosecco, chilled
- 6 sprigs of fresh thyme

Method
- To make the plum syrup, place the plums, caster sugar, vanilla extract and 125ml water in a saucepan over a medium high heat. Bring to the boil and allow to simmer for 8 mins until the sugar has dissolved and the plums softened. Remove from the heat and allow to cool. Strain and chill until needed.
- To serve, divide the syrup between 6 large champagne flutes and top up with prosecco and garnish with a sprig of thyme. Serve.
