When juicy pomegranates are in season you have to make this jewel-bright chocolate bark. With only 4 ingredients, it's great for edible gifting or snacking over the festive period. See method
Ingredients
- 2 x 200g bars dark chocolate
- 200g pomegranate seeds
- 60g pistachios, chopped
- ½ tsp sea salt flakes

Method
- Line a 26 x 38cm baking tray with nonstick baking paper. Finely chop the dark chocolate and melt in the microwave* for 2 mins in 30-sec bursts, stirring in between. Stir through 100g pomegranate seeds, scrape into the prepared tray and spread out in an even layer.
- Sprinkle over another 100g pomegranate seeds and the chopped pistachios, along with the sea salt flakes.
- Refrigerate until hard (about 1 hr), then break or cut into 18 pieces and package in layers of nonstick baking paper tied with a ribbon. Store in an airtight container in the fridge for up to 3 days.
