Method
- Peel 4 wide strips of peel from the orange, then twist around the handle of a wooden spoon and wrap in a damp kitchen paper. Juice the orange.
- Pulse all but 2 tbsp pomegranate seeds in a blender until the juice is released but the seeds are still intact. Strain, reserving the juice – you should have about 100ml.
- Fill a mixing glass or cocktail shaker three- quarters full with ice and pour over the gin, Campari and vermouth. Stir well for 30-40 secs until the container is frosty. Fill 2 short glasses with fresh ice and strain the mixture into the glasses.
- Top with the pomegranate juice, then the orange juice. Firmly twist a strip of orange peel over each glass to spray with the orange oils, then use to rub the rim of the glasses. Garnish with the remaining orange twists and the pomegranate seeds.
