Ingredients
- 100ml tequila
- 50ml peach schnapps
- 50ml lemon juice
- ice cubes
- 2 tsp flaky sea salt
- 1 lemon wedge
- ¼ peach, sliced (optional)

Method
- Around 4 hours ahead or the night before deseed the chillies and halve them to make 4 long thin strips. Set each of these into an ice cube tray then pour over water and freeze until solid.
- When you’re ready to make the cocktail, pour the tequila, lemon juice and peach schnapps into a cocktail shaker and add a handful of ice cubes. Shake until the outside of the shaker feels frosty cold.
- Rub a lemon wedge around the rims of 2 tumblers to moisten and dip into the salt to coat them. Fill the glasses with ice cubes, including 2 or 3 of the spicy ice cubes, then strain in the cocktail. Garnish each with a slice of peach, if you like, then serve.
