Give your morning porridge a boost with this healthy chai latte porridge recipe. Infuse milk with sugar, cardamom, ginger, nutmeg and cinnamon then use this to cook your oats, for a creamy porridge packed with fragrant spices. See method
Ingredients
- 180ml semi-skimmed milk
- 1 tbsp light soft brown sugar
- 4 cardamom pods, split open
- 1 star anise
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp ground cinnamon
- 1 oats sachet

Method
- Place the milk, sugar, cardamom, star anise and ¼ tsp each ginger, nutmeg and cinnamon in a small pan and bring to the boil, stirring occasionally, until the sugar has dissolved. Strain into a jug, discard the whole spices, then return to the pan and use the infused milk to cook the oats according to pack instructions. Spoon into a bowl.
- Mix the remaining ¼ tsp each ginger, nutmeg and cinnamon together until evenly combined then use to dust the top of the porridge, using a latte template to create a unique pattern, if you like.
