Give this classic cocktail a fantastically festive makeover with plenty of ruby red cranberries and tropical coconut water, alongside the usual glug of rum, sprinkling of sugar and squeeze of lime. This gorgeous Christmas cocktail can be ready in no time. See method
Ingredients
- 6 limes, cut into wedges
- 100g caster sugar
- 30g pack mint leaves
- 320ml white rum
- 500ml coconut water
- 250ml soda water
- ice, crushed
- cranberries, to garnish
If you don't have any limes, try a lemon instead

Method
- In a large jug, put the limes, caster sugar and most of a mint leaves (reserving 8 small sprigs to garnish).
- Muddle using a muddler or the end of a rolling pin, until the limes have released their juices and the sugar has dissolved. Add the white rum and coconut water, then top up with soda water and stir well. Chill until ready to serve.
- Add a handful of crushed ice to 8 tall glasses. Divide the mix between the glasses, then finish each with a few cranberries and a mint sprig.
