Cucumber, lime and mint tonic recipe

Cooling cucumber, zingy lime and bitter-sweet tonic water create a refreshing mojito-inspired mocktail that's just perfect for summer. We've used elderflower tonic water for a lovely floral note, but you could use classic tonic water, if you like. See method
Ingredients
- ½ cucumber, coarsely grated
- 50ml lime juice (from 2-3 limes)
- 8 fresh mint leaves
- 1 tbsp caster sugar
- ice cubes
- 200ml elderflower tonic water or classic tonic water
- cucumber slices, to garnish (optional)
- fresh mint leaves, to garnish (optional)
If you don't have any limes, try a lemon instead

Method
- Put the cucumber, lime juice, mint leaves and caster sugar in a bowl. Stir together, then transfer to the fridge for 1 hr (or up to 3 hrs) to steep.
- When ready to serve, strain the mixture through a sieve, pushing it through with the back of a spoon to extract as much liquid as you can; discard the pulp.
- Fill 2 tall glasses with ice cubes, then divide the cucumber infusion between them. Top up each with the elderflower tonic or classic tonic, then garnish with the cucumber slices and extra mint leaves, if you like.
Tip: Flavoured tonic waters are usually made with elderflower, citrus or flavour-packed fruits. They go well with complementing flavours – try elderflower tonic in this recipe, or lemon tonic for a refreshing iced tea.
