This refreshing and fruity mocktail is the perfect sip all year round, and ideal when you want something alcohol-free but a bit special. Frozen mixed summer berries, fragrant elderflower cordial and tangy tonic water instantly place you in the British countryside, sipping on something delicious! See method
Ingredients
- 60g frozen mixed summer berries, plus extra to garnish (optional)
- 1 tsp juniper berries
- 2 tbsp elderflower cordial
- ½ lemon, juiced
- crushed ice
- 120ml low-calorie Indian tonic water with elderflower
- mint sprigs, to garnish (optional)

Method
- Put the frozen berries and juniper berries in a saucepan with 1 tbsp elderflower cordial and 100ml water. Simmer over a low heat for 10 mins. Push the mixture through a sieve into a jug, discarding the leftover fruit, and set the syrup aside to cool (you should have about 50ml).
- Divide the remaining elderflower cordial and the lemon juice between 2 tumblers. Fill the glasses with crushed ice and stir. Pour half the syrup into each glass, then top up with tonic water. Stir gently, then garnish with a frozen blackberry and a sprig of mint, if you like.
