Lemongrass mojitos recipe

The fragrant, citrus flavour of lemongrass goes beautifully well with mint and rum. Use the lemongrass stalk as a stirrer in this delicious mojitos. See method
Ingredients
- 2 sticks lemongrass, bases trimmed
- 3½ tbsp light brown sugar
- 2 limes, cut into wedges
- handful mint leaves, plus 2 sprigs to serve
- 75ml white rum
- soda water, to top up the glasses
If you don't have any limes, try a lemon instead

Method
- Remove the tough outer layers from the lemongrass. Finely chop the bulbous parts and reserve the stalks.
- Divide the chopped lemongrass, sugar, lime wedges and mint leaves between 2 tall glasses and use the end of a rolling pin or a wooden spoon handle to muddle (mash) the ingredients together, releasing their flavour.
- Divide the rum between the glasses, muddle again, then fill up with crushed ice and top up with soda water. Stand a lemon grass stalk and a mint sprig up in each glass then serve the mojito.
