Ingredients
- 400g tinned peaches, in juice
- juice of 1 lemon
- 300ml sparkling water
- 50ml elderflower cordial
- 3 sprigs rosemary
- 1 ripe peach, destoned, halved and sliced

Method
- Tip the peaches, juice and all, into a blender and add the lemon juice. Blitz until smooth, then push through a fine sieve to ensure it’s even smoother.
- Discard any pulp or coarse fibres left in the sieve, and pour the purée into a large jug. Fill this with ice cubes and stir, then top with the sparkling water and elderflower cordial.
- Add the rosemary sprigs and the sliced fresh peach, if you like. Stir gently to combine, without knocking out too much of the fizziness. Serve in ice-filled tumblers.
