Ingredients
- 250ml (8fl oz) pomegranate juice
- 2 strawberries (optional)
- 3 mint sprigs
- ice cubes
- 200ml (⅓pt) sparkling water
- 400ml (⅔pt) pineapple juice
- 2 thick pineapple rings, cut into wedges, to serve (optional)

Method
- Pour the pomegranate juice into a blender or food processor. Remove the stalks from 6 strawberries and add to the blender along with the mint. Blitz for 2 minutes, until smooth.
- Add the ice to the serving jug and pour over the sparkling water and the pineapple juice. Top with the strawberry and pomegranate mixture and serve. Garnish each glass with a strawberry halve and a wedge of pineapple, if you like.
