Sweet potato tots recipe

Impress your guests with a plateful of moreish Christmas canapés. These simple sweet potato tots are made from crumbled goat's cheese, chives and potato, with a kick of warming paprika. Serve with garlic mayonnaise for dipping. See method
Ingredients
- 2 medium jacket potatoes, washed
- 1 large sweet potato, peeled & grated
- 75g goat’s cheese, crumbled
- 3 tbsp cornflour
- 1 tsp smoked paprika
- 2 tbsp chives, finely chopped
- vegetable oil, for shallow frying
- garlic mayonnaise, to serve
You can use a hard cheese, like Cheddar or Stilton, instead of the goat's cheese. Just gently mash before use.

Method

Place the 2 jacket potatoes in a saucepan and cover with water. Bring to the boil and simmer for 15-20 mins – the potatoes should still be a little firm in the middle. Allow to cool.

Peel the skin off the potatoes and coarsely grate into a large bowl. Add the grated sweet potato, goat’s cheese, cornflour, paprika and chives. Mix together until well combined. Shape tablespoons of the mixture into small cylinders with your hands.

Fill a large frying pan with 2cm oil, and heat over a medium-high heat. Fry the tots in batches for 3-4 mins until golden and crisp. Serve immediately with some garlic mayonnaise for dipping.
