Try something new with this warming toasted barley tea recipe. Simple pour hot water over dry-fried pearl barley, stir in a spoonful of honey to sweeten and serve over a fragrant orange slice. See method
Ingredients
- 30g pearl barley
- 2 tsp honey
- squeeze of fresh orange juice, plus 2 thin slices
If you don't have any pears, try using apples

Method
- Rinse the pearl barley in a sieve, then rub dry in a clean tea towel. Heat a small frying pan over a medium heat and add the barley. Toast, stirring constantly, for 4-5 mins until deep golden brown and nutty-smelling, then remove from the heat and transfer to a teapot.
- Pour over 500ml boiling water and stir in the honey. Allow to brew for 3-4 mins until golden, then pour into cups. Add an orange slice and a squeeze of juice to each cup for a little extra zing.
Tip: Any citrus works well here. Try grapefruit or lemon too.
