Ingredients
- 500ml white wine
- 400g frozen cranberries
- 75g caster sugar
- 2 star anise
- 2 oranges, juiced
- orange peel, to garnish

Method

Pour the wine into a large, shallow freezer-proof container and freeze for 24 hrs.

Reserve a few cranberries for garnish and put the remainder in a medium saucepan with the sugar and star anise. Cook on a medium-high heat until the cranberries start to pop, releasing their juice, and the sugar has dissolved, then let simmer for 5 mins. Remove from the heat and allow to cool. Discard the star anise and pass the mixture through a fine sieve.

Blend the frozen wine in a food processor with the cranberry purée and orange juice until you have a slushy consistency. Divide between 4 glasses. Garnish with the reserved cranberries and a twist of orange peel. Serve immediately.
